Hey guys, I have something delicious to share with you on National Lemon Meringue Pie Day!  Okay, yes, it’s lemon meringue pie.  I sort of blew the element of surprise there in my excitement, but I do have a lot of fun things to share in today’s post.  Not only am I sharing the lemon meringue pie recipe that I have loved since my childhood, but today’s sponsor, Ginny’s, is offering two ways to win some great kitchen gear.  For all you bakers and home chefs out there, this is my way (and Ginny’s way!) of showing you love and affection on this great national holiday.

My aunt used to make the most amazing pies, and I’d ask for lemon meringue every time she asked for suggestions.  Lemon Meringue has definite technique to it, but as long as you have the right equipment for it, it’s actually extremely easy!  That’s where Ginny’s has you covered, from stand mixers and cookware sets down to utensils and serveware – they’ve got your kitchen covered.  (And not just your kitchen!  Ginny’s has bed, bath, lighting, outdoor items and more!)  Ginny’s sent me a few items to outfit my kitchen, and I was thrilled to discover that a many of their items are available in sever color choices.  My red kitchen was awfully happy.

And then I made pie crust, so my kitchen got awfully messy, but hey – pie is worth it.  Right?  Seriously, tell me these didn’t turn out adorable.

So – let’s get to baking here!  I will confess this: I nearly always cheat on pie crusts and buy the pre-made frozen ones, but because I was making minis today, it couldn’t be avoided: I had to make crust.  I don’t even have a recipe for pie crust, so I used this pie crust I found on AllRecipes, sprayed extra-large muffin tins with baking spray, and baked the mini pie crusts for 10 minutes before making the lemon filling and meringue.

Ingredients
  • 3 eggs
  • 1 c. granulated sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. flour
  • 1 c. water
  • Juice from 2 lemons (should be 5-6 Tbsp., or slightly more than ¼ cup)
  • Zest from 2 lemons (about 2 Tbsp.)
  • 1 Tbsp. butter
  • 9-inch prepared pie crust, or 6 mini crusts baked in extra-large muffin tins
Instructions
  1. Preheat oven to 350ºF.
  2. Separate egg whites and yolks. Whisk yolks together until smooth in a small bowl and set aside. In a stand mixer, add ¼ c. of sugar and egg whites, and allow your meringue to whip as you work. It will be a few minutes before the egg whites thicken and form soft peaks (If you plan to mix by hand, you can complete this step after making the lemon filling).
  3. In a small saucepan, mix together the remaining ¾ c. sugar, cornstarch, and flour until well-blended. Beat in water, lemon juice and zest. Heat over medium heat, stirring frequently, until the mixture comes to a boil.
  4. Reduce heat to a simmer, and add egg yolks and butter. Stir contantly until filling is smooth and thick.
  5. Remove filling from heat, and pour into crust(s). Check to make sure your meringue is soft and fluffy, or if mixing by hand, beat egg whites and ¼ cup of sugar together until soft and fluffy. (If it’s still a bit thin, increase the speed of your mixer. Meringue should be about the consistency of whipping cream.)
  6. Top lemon filling with meringue, using a spatula to create classic peaks if you wish.
  7. Bake for 10 minutes, or until meringue browns lightly. Peaks may become a darker brown.
  8. Cool and serve.

It’s been ages since I had homemade lemon meringue pie, and after making it, I don’t know why I don’t make it more often!  The stand mixer is a life-saver – the meringue pretty much makes itself in there while the filling only takes about 5 minutes to cook on the stovetop.
