Sheet Pan Chicken Fajitas
Quick and easy is my go to when we are running around like crazy trying to get everything done. With 4 kids, homeschooling and working from home crazy is something that is normal in our house.
I have always loved Mexican food and even better I am crazy happy that there are so many choices for Low Carb Mexican Food. Unfortunately for me Mexican food doesn’t happen very often because all of the good Mexican places are quite far from our house, so my go to is making things at home!

So the great thing about Mexican food is that so much of it is low carb and keto friendly. These Keto Chicken fajitas are my favorite at home Keto Mexican meal to make!
It is important to note that red and yellow peppers have higher amount of carbs then the green bell peppers. Personally I grab what is on sale or what I am in the mood for and the few extra carbs in the red and yellow ones are ok with me. If you are strict on your carb counts then you will want to stick with using green bell peppers.

Homemade Guacamole tastes amazing and is low carb, I like to put it on just about everything I can! Including these sheet pan fajitas!
If I haven’t made any queso then I top my fajita bowl with guacamole or sour cream and cheese!
My favorite way is to put the sheet pan chicken, onions and peppers into a bowl and pour some homemade white queso on top. Then I mix it all together and oh yum!

Sheet Pan Chicken Fajitas Ingredients
- yellow pepper, sliced
- red pepper, sliced
- orange pepper, sliced
- red onion, sliced
- Fresh chicken breast, sliced thin
- 2 tablespoons olive oil
- chili powder
- dried oregano
- garlic powder
- onion powder
- Salt, to taste
- pepper, to taste
How to make Low Carb Sheet Pan Chicken Fajitas
Preheat oven to 400°F.
Wash and slice the peppers, onions and chicken into slices.
Place the peppers, onion and chicken onto a sheet pan and drizzle the olive oil over the mixture and stir well to coat everything with the olive oil.
Sprinkle all of the seasonings on top of the peppers, onions and chicken and stir until everything is well coated.
Cook the peppers, onions and chicken for 10 minutes then stir everything.
Place the sheet pan back in the oven for an additional 10 minutes or until the chicken has reached an internal temperature of 160°F.
